Setting up your team for success with Waste tracking will help ensure waste is tracked consistently and accurately throughout the day
- Have at least 2 Waste tablets
- We recommend mounting one tablet on one side of the BOH, and one on the other to make sure all Production Waste is captured
- Mount a tablet in the kitchen close to where food is produced so Waste can be captured in real time, at it's source
- An additional tablet on the Front Counter for tracking FOH Waste is ideal
- Encourage the team to track all Waste in real-time
- Tracking items as they are wasted gives your leaders the most accurate reporting to identify areas of opportunity
